by Maha Khan

A crispy crunchy chicken burger satisfies a craving for comfort food like no other. And while we are all huge fans of original recipes, sometimes copycat versions also sing to our souls in a way no other food can. Law Student and Chef Maheen Z Shaheen’s copycat zinger recipe definitely makes the cut! The highly seasoned marinade seeps its flavours through the tender chicken and meshes well with the snappy mayo and burger sauce. • 4 boneless chicken breast pieces
  • 2 cups yogurt
  • 1 tsp salt
  • 1 tsp black pepper

  • 1 tbsp soy sauce

Mayo Sauce

  • Juice of 1 large lemon
  • 4 tbsp mayonnaise
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder (Shaan garlic powder is easily available)

Burger Sauce

  • 1 tbsp chilli sauce
  • 1 tbsp ketchup
  • 1 tbsp mustard
  • 1 tsp salt

Zinger coating

  • 1 tsp chilli garlic sauce (optional)
  • 2 eggs (beaten)
  • 1 cup flour
  • 1/2 cup cornflour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp red chilli powder

  1. Combine all ingredients for chicken marinade together. Do not add chicken breasts.
  2. Pound the chicken to flatten it and then add to the marinate mixture.Marinate for at least 1 hour.
  3. For the mayonnaise sauce, mix all the ingredients and set aside.
  4. Merge all ingredients for the burger sauce and set aside.
  5. Beat the two eggs together and set aside.
  6. Beat the two eggs together and set aside.
  7. Combine flour, corn flour, salt, black pepper and red chilli powder. Set aside.
  8. Heat oil in a deep pan on a medium flame. Do ensure that there is enough oil to deep fry the chicken.
  9. While the oil is heating up, take the chicken breast piece out of the marinade and coat it evenly with the flour mixture. Next, coat it in the egg mixture. Finally, coat it in the flour mixture once more. Shake off the excess flour and fry in the hot oil.
  10. Fry on medium heat for 2 mins and then on low heat 8-10 mins. Turn the heat up again for another 2 mins before taking your chicken out. The chicken should be a deep golden colour.
  11. Now assemble all the elements – Take a bun (we used Dawn Burger Buns) and spread Mayo Sauce on the top half. On the bottom half, add a cheese slice (optional) and spread the Burger Sauce. Once the chicken is cooked, place it on top of the Burger Sauce. Top off with lettuce & onions (optional) or any veggies you like (tomatoes, jalapeños etc) and your copycat KFC Zinger burger is ready!
